Gajar Ka Halwa or Carrot Pudding Recipe

Gajar ka Halwa or Carrot Pudding is a great way to introduce the sweetness of carrot in your life. If you have kids who hate the Vitamin A of a Carrot then this would be a sweet way to make them love it. This pudding is really healthy because it also contains dry fruits which are great source of vital minerals like potassium, magnesium, etc.

Ingredients

Condensed milk: 100 ml

Milk: 200 ml

Cardamom: 3 nos

Carrots peeled and grated: 300 Gms

Mawa grated: 100 Gms

Pistachio flakes: 40 Gms

Pure ghee: 30 ml

Sugar: 20 Gms

Serves: 5 Cooking Time: 19 minutes

Method:

·         Add cardamoms to the milk, and microwave in a deep casserole on ‘high’ power for 4 minutes, stirring in between.

·         Add condensed milk, carrots and pure ghee, mix well and microwave on ‘medium’ power for 10 minutes. Keep stirring the mixture every 2 minutes.

·         Incorporate the grated mava, sugar and ¼ of the pistachio flakes. Mix well and microwave on ‘high’ power for another 5 minutes or, more depending on the moisture content of the carrots. The mixture should be moist and not dry.

·         Garnish with slivered pistachio and serve hot preferably with vanilla ice-cream.
