Garden Recipes Chicken Asparagus Frittata Use Your Final Asparagus of The Season
Here is a yummy recipe to help you use up your asparagus.
Received from Fresh Chicken Solutions Tyson
1 package Tyson Fresh, Boneless skinless chicken thighs cut into 3/4 inch pieces
3 Tablespoons olive oil
2 cups of garden fresh asparagus cuts frozen
1/2 red bell pepper cut into strips
1 small onion cut into thin wedges
4 cups day old ITALIAN OR French bread 1/2 inch cubes
1 cup shredded cheddar cheese
5 beaten eggs
1 1/2 cups half and half
1 teaspoon seasoned salts
3/4 teaspoon thyme leaves
1/2 teaspoon pepper
1/2 cup shredded Monterey jack cheese
1 9 ounce package hollandaise sauce mix
1 teaspoon fresh lemon juice
1 teaspoon chopped chives
Heat oven to 350F a 9 inch baking dish with with noon stick cooking spray wash hands then in medium bowl blend eggs, half and half, seasoned salt, thyme and pepper.
In large skillet, heat 1 Tablespoon oil over medium high heat. Add chicken, stir fry 5-7 minutes or until juice runs clear. Remove chicken to plate; keep warm. Add remaining 2 Tablespoons oil to skillet, add asparagus, pepper and onion, cook and stir 3-4 minutes or until asparagus is crisp tender, remove from heat. In large bowl combine chicken, asparagus mixture, bread cubes and cheddar cheese. Add egg mixture to chicken mixture mix well and let stand 6 minutes. pour evenly into sprayed pan baked 35-45 minutes or until puffed and golden on top, Top with monterey jack cheese and bake 5-10 minutes longer to melt cheese,. Let stand 10 minutes before serving Meanwhile prepare hollandaise sauce according to directions blend in lemon juice and chives.
cut into pieces after cooked then add hollaindaise sauce.
Store in refrigerator if you don’t eat it all and as soon as you are done making it put in refrigerator immediately.
