1) Grated Carrots – 2 cups
2)Milk -2 cups
3)Sugar -To taste (approx. 8 tablespoons)
4)Milk powder -2 tablespoons
5)Condensed Milk -Quarter of a tin
6)Cashews and raisins -Optional, to decorate
7)Ghee -3 tablespoons
8)Cardamom powder -to taste (approx. half a teaspoon)
Pour 1 tablespoon ghee in a heavy bottom sauce pan and saute the cashews and raisins in it for half a minute. Drain the excess ghee from the cashew and raisins and keep it aside. Now add grated carrots in the saucepan and cover the pan with a lid stirring occasionally. Once the carrots become sauted,tender and wrinkled ,add milk.
Keep stirring till the milk almost dries up and then add sugar and condensed milk and stir till the sugar dissolves.Now add the remaining 2 tablespoons of ghee and milk powder and give it a good mix. Once everything is thoroughly mixed,turn off the stove and add cardamom powder. Mix it well once again.
Now grease a plate with ghee,and evenly spread your halwa. Decorate it with cashews and raisins. You can cut it into diamond pieces once it cools down. You can also refrigerate it before eating.
