Glazed Apple and Goji Berry Cookies

Finally a recipe that combines the super foods apples, walnuts, and goji berries into one tasty little cookie.

 This quick and easy cookie recipe is sure to please The Whole Family, whom ever they are, and yours as well. It features extremely nutritious ingredients including apples, walnuts, and the super fruit goji berries.

Macaque King just came the to realization that he could have made apple goji berry cookies.

2 Cups White Flour (you can experiment with other flours, however avoid the heavier flours)

1 tsp Baking Soda

1 tsp Fair Trade Organic Ground Cinnamon

1 tsp Freshly Ground Sea Salt

1 1/2 Cups Firmly Packed Fair Trade Organic Brown Sugar

1/2 Cup Vegetable Shortening

1/4 Cup Milk, Soy Milk, Hemp Milk, Almond Milk (Your Choice of 1)

1/2 tsp Freshly Ground Fair Trade Organic Nutmeg

1/4 tsp Fair Trade Organic Ground Cloves

1 Free Range Chicken Egg or Equivalent Baking Egg Substitute (I prefer real eggs)

2 Cups Finely Chopped Locally Grown Organic Apples

1 Cup Chopped Locally Grown Organic Walnuts

1 Cup Rehydrated Fair Trade Organic Goji Berries

 How to Make Glazed Apple and Goji Berry Cookies

Preheat oven to 400F/200C degrees.

Rehydrate the Goji Berries in water so you have enough for 1 Cup (you can save this water to add to stocks)

Sift flour, soda, spices and salt together and set aside.

Beat shortening, sugar and egg. Stir in flour mixture alternating with apples and milk. Stir in nuts and goji berries. Drop on lightly greased cookie sheet. Bake 10 minutes until golden brown.

 

GLAZE

1 Cup Organic Powdered Sugar (If you can not get Organic any Powdered Sugar is okay since this is an occasional treat)

1/2 tsp Fair Trade Organic Vanilla (never use imitation or artificial vanilla)

1 tbsp Melted Butter, Margarine, or Butter Substitute

1 1/2 tbsp Hot Milk, Soy Milk, Hemp Milk, Almond Milk (Your Choice of 1)

 

Combine and brush on the tops of the baked cookies while still warm.
