Cooked carrots are most often served as a vegetable side dish. They may be scalloped, glazed, or used in casseroles. Raw carrots are often used in salads and slaws or as an appetizer.
Fresh carrots may be stored from one to three weeks in the refrigerator. Before storing, remove and discard the tops and rinse in cool water. Select fresh carrots that are firm, well shaped and smooth. The brighter the color, the more carotene a carrot contains. Wilted, soft, or shriveled carrots will be tasteless. And large plump carrots with cracked surfaces are fibrous and will have poor flavor.

Carrot Croquettes
Ingredients:
4 cups cooked carrots
½ teaspoon salt
½ teaspoon nutmeg
1 egg, beaten
2 tablespoons butter, melted
1 cup bread crumbs
Sprigs of parsley
Press the carrots through a coarse sieve. Add the salt, the nutmeg, the egg and the butter, mixing thoroughly. Form the mixture into carrot shapes and roll in the bread crumbs. Chill these croquettes for several hours. Fry the carrot mixture in hot oil until browned. Drain and serve with a sprig of parsley. This recipe will serve 8.
Scalloped Carrots
Ingredients:
12 medium carrots, sliced
¼ cup butter
1 onion, minced
¼ cup flour
1 teaspoon salt
¼ teaspoon dry mustard
¼ teaspoon celery salt
2 ½ cups milk
½ pound sharp cheese, grated
3 cups buttered bread crumbs
Cook the carrots in boiling salted water until tender and then drain. Melt the butter in a saucepan and then add the onion. Blend in the flour, the salt, the mustard and the celery salt. Add the milk gradually to the pan and cook, stirring constantly, until the sauce is thickened. Arrange alternate layers of carrots and cheese in a greased baking dish, ending with carrots on to. Pour the sauce over the top and sprinkle with the bread crumbs. Bake in a 350 degree oven for at least 35 minutes. This recipe will serve 8.
