Green Tomatillo and Avocado Dip

Tomatillos are small vegetables that look similar to green tomatoes in a paper-like shell. Do not use green tomatoes as a substitute in this recipe, however. This recipe appears to be high in fat; all of the ingredients are very low in calories except for the avocado.

Ingredients

6 medium tomatillos
1 medium avocado
1 serrano pepper,
Juice of 2 fresh limes
2 tablespoons fresh cilantro, chopped
Salt, pepper, onion powder, garlic powder to taste

Procedure
Boil whole tomatillos until soft. Cool, remove the outer green skin, pour off excess water, and mash the tomatillos until they form a green paste. Place the peeled and sectioned avocado in a food processor with all remaining ingredients (except tomatillo paste). Blend until smooth. Combine tomatillo mixture with avocado mixture, adjust spices, and serve. Serves 8.

    I am allergic to avocados unfortunately. Haven’t always been and in fact I had a lemon tree and a huge avocado tree in my backyard growing up that I ate from on the regular :-)

    Maybe that is what got me. I ate too much guacamole and peppered avocado for my body to take.

    This would taste better if the tomatillos were roasted first. That’s more traditional in the Southwest than boiling them.

    (Tomatillos are small vegetables that look similar to green tomatoes in a paper-like shell) These sound similar to what I always thought were very strange ‘berries’ that grew on a bush in our front yard in South Africa…now I find out they’re Tomatillos..go figure, I guess one is never too old to learn something new :-)
