Greens and Eggs

This article is a recipe with egg and spinach.

This salad with egg and spinach is super easy and nutritious.

SERVES: Four

TIME REQUIRED: 15 minutes

Ingredients required:

·         350gm fresh spinach Ieaves,

·         chopped 2 tbsp oil (olive oil, for the health conscious),

·         ¼ cup finely chopped onion.

·          Water, if required

·          5 eggs, beaten

·         Salt and pepper to taste.

Method:

·         Heat the oil in a kadai and add the onion. Cook till transparent and crisp.

·         Add the chopped spinach leaves and allow to cook. Stir for about five minutes, till the leaves become tender.

·          Add a little water, about three or four table spoon, if required, to keep it moist.

·          Mix in the eggs and stir such that they scramble with the spinach.

·         Add the salt and pepper

·         Serve hot.
