Grilled Fruit Skewers

Goes good with Buttermilk Ice Milk.

8 bamboo skewers, 10-12″ long

2 mangos, peeled & seeded

2 sm. papayas, peeled & seeded

1/4 – 1/2 pineapple, peeled & cored

8 strawberries

Soak skewers in cool water for 30 min.

Preheat gas grill to med.  If you are using charcoal grill, build a fire & let it burn down til coals are glowing red w/ moderate coating of white ash.  Spread coals in an even bed.  Clean cooking grate.

Cut fruits into relatively equal-size pcs.  Thread fruit onto skewers, alternating them.  Grill fruit skewers, turning as necessary, til slightly charred & hot, about 6-8 min., depending on ripeness of fruit.

Serve fruit skewers w/ Buttermilk Ice Milk.

Makes 8 servings.
