Ham and Eggs in Potato Skins

Tasty easy to make breakfast for six.

3 Potatoes

6 Eggs

2 teaspoons Milk

3 slices of Ham, diced

3 hands full of Shredded Cheddar Cheese

Salt and Pepper to taste

Wash potatoes, pierce with a fork and microwave for 12 minutes or until tender when pierced.

In the mean time, beat eggs, add ham, milk, and salt and pepper. Cook over medium heat until soft scrambled.

Remove potatoes from microwave and run under cold water until they are cool enough to handle.

Slice potatoes in half, scoop out most of the potato, leaving skin intact to use as shells. ( save potato for another meal )

Fill potato skins with ham and egg mixture, sprinkle with cheese, and microwave for 30 seconds to melt the cheese a little.
