Herbed Zucchini on The Grill

Here is a recipe for those who have tons of zucchini this summer. THis recipes is for you or, really, anybody who loves zucchini they could buy one. We bought one for filet mignons earlier this summer.

This came from Barbecue lovers II cookbook from Betty Crocker

4 medium zucchini, cut into 1/2 inch slices

2 medium tomatoes cut into wedges

2 teaspoons instant minced onion

1 teaspoon salt

3/4 teaspoon dried oregano

1 Tablespoons margarine or butter

place zucchini on 20×14 inch piece of double thickness heavy duty aluminum foil. Add tomatoes. Sprinkle with minced onion, salt and oregano Dot with margarine or butter. Wrap foil securely.

Grill foil packet 4 inches from medium coal 30 minutes , turning once, until zucchini is tender. Remove from foil with slotted spoon.
