PREPARATION TIME: 5 MINUTES COOKING TIME: 30 MINUTES SERVES 12

800g (11b 12oz) baby potatoes

4 sprigs fresh thyme

2 sprigs fresh rosemary

2 to 3tbsp olive oil

zest Vj lemon

Vi garlic bulb, unpeeled, cut widthways

1  Boil the potatoes with 2 thyme sprigs for about 10 minutes or until nearly cooked through. Drain and allow to cool.

2 Spread out 2 large sheets of foil, add the potatoes and scatter over the remaining thyme, rosemary, olive oil and lemon zest. Place the garlic among the potatoes and season the potatoes well with salt and pepper. Seal by scrunching the foil together tightly.

3  Place on the barbecue and grill for 15 to 20 minutes. Take care when opening the parcel to serve, as there’ll be a lot of steam inside. Perserving: 63cals, 2g fat, 0.5g saturated fat, 1 ig carbohydrate
