How to Cook “Viazi Karai”
“Viazi Karai” is a mouth watering dish that is very common on the Kenyan coast. It is a dish that people take at any time of the day.’Viazi’ means “potato”, so the dish basically consists of flour coated spiced potatoes.
Ingredients
You will need,
1)Previously boiled large potatoes.
2)Wheat Flour
3)Bright Orange food color
4)Corriander
6)Chillies
7)Salt to taste
- Peel the previously boiled potatoes and cut them into cubes
-In a bowl, mix the flour, Corriander, chillies ,salt and a pinch of the bright orange food colour. Add some water so as to make a thick paste.
-Add the potato cubes into the paste so as to make a thick coating on to the potatoes
- Heat some oil in a pan and deep fry the potatoes till the turn golden brown.
Best served when hot. In Mombasa Kenya its an all time meal and can be enjoyed at any time of the day.
