How to Make Chicken Croquettes From Scratch
An overview on how to prepare chicken croquettes from scratch.
Chicken Croquettes are delicious and quite simple to prepare. Many people prepare chicken croquettes from leftover chicken that they may have had on the previous day. Chicken Croquettes can be made from leftover roasted chicken and you may use both white and dark meat.
You will need any leftover chicken white or dark meat or you can bake boneless chicken breasts and use it for your croquettes. In addition, you will need 1 cup of diced onion, 1 cup diced celery, 2 eggs, ½ cup of melted butter, ¼ cup grated Romano cheese, ½ cup of whole milk or light cream, 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon garlic powder, 1 cup of Italian seasoned breadcrumbs, and 2 cups of Idaho mashed potato flakes (for the breading or coating).
First, cut chicken into small squares or tiny pieces, place in large mixing bowl, add salt, pepper, garlic, eggs, cream/milk, melted butter, Romano cheese, and about ½- 1 cup of the breadcrumbs. Mix all ingredients together with chicken and start to roll the chicken into medium size balls as if you were rolling meatballs.
The croquettes should be rolled to look somewhat round but flat at the top and bottom. Once you have rolled all of your croquette mix into ball shapes it is time to apply the breading.
In large dish put 2 cups mashed potato flakes, take each croquette separately and begin to roll the balls over the potato flakes until nicely coated. In a large skilled add 1 cup Canola oil and when oil begins to bubble you can start adding the croquettes.
When croquette looks golden brown it is time to turn and cook other side also. Total cooking time varies but normally between 4-6 minutes each side. Drain any excess grease with paper towel before serving. Chicken croquettes are tasty and can be served over mashed potatoes.
