Italian Sauce Recipes
Neapolitan Sauce is a thinner sauce than others, with a fine tomato flavor. Bolognese Sauce is a thick sauce almost like a stew. Serve Bolognese Sauce over pasta to make a complete main dish.

Neapolitan Sauce
2 tablespoons olive oil
1 teaspoon bacon fat
1 onion, chopped
1 carrot, chopped
1/2 cup chopped celery
4 tomatoes, peeled, seeded, chopped
1/2 cup water
2 tablespoons tomato paste
1 clove garlic, crushed
1 1/2 teaspoon dried basil or 2 tablespoons fresh basil
1 1/2 teaspoon salt
dash pepper
Heat oil and bacon fat in large saucepan. Add onion, carrot, celery; saute until brown. Add remaining ingredients and simmer 1 1/2 hours.
Bolognese Sauce
2 tablespoons olive oil
1/2 cup chopped parsley
1/2 cup chopped onion
1/2 cup chopped celery
1/4 pound ground beef
2 ounces Italian, sweet sausage
1/2 cup tomato sauce
1/2 teaspoon salt
dash pepper
1/2 ounce dry mushrooms, reconstituted
1/2 cup Chianti wine
Heat oil in large saucepan. Add vegetables and saute until onion is soft. Add meat and cook until brown. Add tomato sauce, salt and pepper. Simmer gently, covered, for about an hour; add mushrooms and wine and cook another half hour or until sauce is thick.
