It’s Sweet Potato Time!
If you’re trying to find a new way to prepare sweet potatoes and/or pasta here’s a recipe that you will find to be both healthy, delicious and SO EASY!! This is a creative why to incorporate the rich nutrients from the sweet potato with a magnificent sauce to go with your favorite pasta. This recipe is a good base recipe and can be varied with so many different ingredients.

Are you looking for a great filling and easy meal to prepare using sweet potatoes? I know it can be hard to figure out what to do with these potato wonders but this recipe is so versatile and so easy you’ll be making it more than once a week. Here it is:
Ingredients:
1 lg. sweet potato, diced
1c sour cream
1 1/2 c chicken stock
3 Dried Ancho Chilies
Salt and Pepper
1 box Whole Wheat Penne Pasta
1lb ground turkey
1 head Fresh broccoli, cut into pieces
2 scallions, chopped
Directions:
For the chilies:
Place the chilies in a small saucepan with water just to cover them. Cover the pan and turn heat on medium/high till water starts to boil. Turn off heat and time for 10mins. Take the chilies out of pan and save the water but drain the seeds. Cut open each chile and scape out seeds and stems. Place in a food processor.
For the Sauce:
Along with the chilies add to the food processor sour cream, chicken stock, salt and pepper.
Cook the potatoes in some water till tender. Save the water and add the potatoes to the blender. Add about 1/2 cup of the chile water to the blender and blend till smooth.
Cook the pasta according to the directions.
Cook ground turkey till no longer pink. add broccoli and stir around then add the blender sauce. mix well and add the pasta. Mix together and sprinkle with scallions. Enjoy!
