Jicama Maca Pancakes with Avocado Raisin Sauce
This is a nutritionally power packed alternative to potato pancakes that is simple to make once you take the time to find the readily available ingredients.
These simple pancakes are made up of Jicama( pronouced Hickama), which is high in Vitamin C, Fiber, Calcium, Potassium, and Iron, combined with Maca Powder. Maca is considered to be one of the Super Foods and is claimed to increase endurance, libido, neural activity, and regulate hormones for emotional balance. Combine that with an Avocado Raisin Sauce packed with other super nutritious ingredients and you just turned to traditional root or tuber based pancakes into a nutritional power feast.
Pancake Ingredients
2 large Jicamas (enough for 4 to 6 cups when grated)
2 tablespoons Whole Wheat Flour (experiment with other flours)
1 tablespoon Maca Powder
1 Medium Onion Finely Sliced
organic fair trade peanut or grape seed oil (for pan frying)
salt and pepper
*For a more power packed mix substitute the Whole Wheat Flour with additional Maca.
*Vegans may try substituting egg with oils for binding, such as Hemp Seed Oil.
Not Peanut Oil, Grape Seed Oil may be used as a binding agent in a pinch.

Sauce Ingredients
1 Fair Trade Organic Avocado Peeled and Chopped
1/4 cup Fair Trade Organic Raisins
1/4 cup Pumpkin Seed Oil or Hemp Seed Oil
1/8 cup Freshly Squeezed Lime Juice
1/2 tsp. Fair Trade Organic Cane Sugar
1/2 tsp. Freshly Ground Sea Salt
1/8 tsp. Freshly Ground Pepper

This sauce will have a similar appearance and taste to Guacamole.
Before you begin to prepare this dish put the music of Zani Diabate on the music playback device of your choice.
To make the sauce,
Mix all ingredients in a blender until thoroughly combined place in a covered bowl in the refrigerator until ready to serve. Chill at least one hour.
Pumpkin Seed Oil is a healthy alternative when you are using oil that does not need to be cooked or with lower temperature cooking,as Pumpkin Seed Oil can not be used to cook higher than 212F/100C.
To make the pancakes,
Grate Jicama. Mix in free range chicken egg, whole wheat flour, maca powder, onion, salt and pepper. Form into patties and fry until brown on both sides (about
2 minutes for each side).
Both peanut and grape seed oils have high smoke points and this is why they are suggested for the frying of the pancakes.
