Layered Pumpkin Cheesecake
If your family keeps begging for a special dessert and you don’t want to turn on the oven. Here is a delicious layered pumpkin cheesecake that doesn’t take any cooking. Keep these ingredients on hand so you can mix up this special dessert at any time. It does have to sit in the refrigerate a few hours, so it’s a good idea to make a day ahead. It’s delicious and easy to make. What could be better than that?

Layered Pumpkin Cheesecake
Ingredients:
1 box ginger lemon creme cookies
2 Tbsp melted butter
2 tubs refrigerated cheesecake filling
1 can pumpkin puree
1 1/2 tsp pumpkin pie spice
Garnish with pecan halves and caramel sauce if you wish.
You’ll need an 8 by 3 in. springform pan coated with nonstick spray.
Place cookies in a food processor or crush them up by hand. You want them finely chopped.
Add melted butter, process until crumbs begin to stick together.
Press over bottom of prepared pan.
Stir 1 tub cheese cake filling into large until smooth.
Spread on crumb layer.
Stir remaining tub of cheesecake filling, pumpkin puree and pumpkin pie spice in same large bowl until blended and smooth. Evenly spread over plain cheesecake in pan. Cover and set in refrigerator for 4 hours.
remove pan sides and place pecans around top and edge of cake . Put caramel sauce into a small Ziploc bag and snip off small corner and pipe sauce on top.
A good plan is to make this cake a day or two ahead and top with pecans and sauce when ready to serve.

Yummy; but there goes my diet. This sounds delicious and you know I’m going to try it, enjoy it and make it again. Fortunately I don’t diet, diet. (no fad diets for me) I eat whatever I want but in sensible quantities. I’m going to enjoy this and not feel the least bit guilty. Thanks.

Sounds great Ruby, I would like to try it as I like pumpkin and cheese cake but I am not sure we have some of those ingredients here, so maybe I will have to improvise. Thanks for the recipe.

EXRTA YUMMY! My mom likes anything that is not baked she claims her oven is the wrong temperature or something is wrong with it. Yest she makes the best food in it ever. She is the best cook and baker in the world, at least in my opinion
