Leftover Mashed Potato Vegetable Patties

This is a great way to use up leftover potatoes and vegetables.
2 cups mashed potatoes
1-2 cups leftover vegetables, mashed or finely chopped
1/2 cup onion, finely chopped
1 clove garlic, crushed
2 eggs
1/2 cup grated cheese, any kind (If vegetables are already in a sauce, such as green bean casserole, omit cheese)
Combine all ingredients. Mixture should be thick enough to be handled to make patties. If too thin, add more potatoes. Form patties and pan fry in hot oil. Turn to brown on both sides.
