Leftover Tofu Burger Recipe
Easy as 123 leftover recipe.
I went overboard with my Tofu Burger the other day. I got stuck with 2/4 pounds of tofu burger mix and I just could not eat another patty. I was also craving for something with sauce so I came up with this easy and simple recipe. It’s a bit like Chicken Afritada but with a different set of ingredients.

The Magic Ingredients:
- Leftover Tofu Burger Patties
- Leftover Fried Tofu (cut into small squares)
- 10 Baby Potatoes (or as many as you want), peeled
- Tomato Paste
- Diced Onion and Garlic
- 1 cup water
- 1 can of mushroom
- 1 can of kernel corn
- oil for frying
- green pepper
- 2 green Asian peppers
- salt and pepper to taste
Brewing the Magic:
- Heat cooking oil in a pot
- Sauté onions and garlic until brown
- Add tomato paste,water, mushroom juice and kernel corn juice
- Add baby potatoes then bring to boil until the potatoes are cooked
- Add salt and pepper according to your taste buds
- Add Leftover Tofu Burger Patties, mushroom and kernel corn
- Let it simmer for about 3 minutes
- Add Leftover Fried Tofu
- Add the green peppers and simmer for about 3 mins.
- Enjoy your meal!
*Good for 4 people or more
You can use tomato sauce if you want, I had to use tomato paste because we were out of tomato sauce. You could also add some carrots or any other ingredients you want.
This is an Asian dish so it’s eaten with rice. I used about 2 to 3 cups of water because I love sauce.
