Lentils -a Wholesome Meal
Legumes once or twice a week to provide us with all the nutrients we need.
Lentils! What a wholesome meal can be. By having a hearty plate of them, you’ll need no more to cope with a day’s work. An easy recipe of lentils contains all the nutrients that we need for the day. They have fibre, carbohydrates, proteins (if you add meat of some sorts) and vitamins.
In fact we have to eat legumes at least once or twice a week, be them lentils, beans or chickpeas.
This is my recipe of lentils that I cook whenever it takes my fancy, or I’m so broke that I can’t spend a lot on food. For this one you’ll need 400 grammes of green lentils, as in the photograph, an onion, a green pepper, a couple of spoonfuls of tomato puree, few cloves of garlic, a bay leave, a carrot, a leek and chorizo sausage.
There we go again.
Lentils don’t need to be in cold water overnight as beans or chickpeas. It’ll be enough if you put them in cold water while you prepare the rest of the ingredients.
On a wooden board, chop the onion finely. Chop the green pepper, the leek and the carrot. Pour a little of olive oil in stew pot. First fry the onion lightly. Then, the pepper, the leek and the carrot to finally, add the tomato puree. After few minutes, add the lentils with the cloves of garlic, the chorizo sausage and the bay leave. Cover with cold water and let it boil on a low fire till all is tender. Finally, add a handful of rice to boil together. If you like it hot, you may add some chillies chopped.
It couldn’t be more simple, cheap and nutritious.
