Sweet potatoes carry many fantastic nutrients, making this side dish option as healthy as it is tasty. This recipe makes four servings, but you can multiple it as needed. Each serving has 250 calories and 48 grams or carbohydrates. The nutrients each serving offers are 4.3 grams of protein, 1 milligram of iron, 53 milligrams of calcium, 5.4 grams of fiber, and 41 micrograms of folate. You can adjust the seasonings and crushed nut topping to suit your personal taste.

Ingredients:

3 Pounds of sweet potatoes

2 Tablespoons of butter (softened or melted)

1/3 Cup of fat-free sour cream

3 Tablespoons of honey

Salt (to taste)

Pinch of red pepper flakes

3 Tablespoons of chopped pistachios

Directions:

  1. Wash and peel the sweet potatoes. Cut the sweet potatoes into cubes, each around one inch.

  2. Preheat the oven to 400 degrees.

  3. Coat a baking sheet with cooking spray.

  4. Place the sweet potatoes cubes on the baking sheet, in a single layer.

  5. Lightly spray the sweet potatoes with cooking spray.

  6. Bake the potato cubes for around forty minutes, occasionally shaking the baking sheet or stirring them with a for to ensure even heating.

  7. Place the cooked potatoes, butter, sour cream, honey, salt, and red pepper flakes in a large bowl.

  8. Mash or beat the ingredients together using a mixer until everything is well mixed and the texture is smooth.

  9. Sprinkle the mashed sweet potatoes with pistachios, serve, and enjoy.
