Mini Potato Pancakes
A quick and delightful alternative to fries. Go on, give it a try!
We’ve all eaten fries before — long, thin sticks of deep-fried potato. With the flurry of people on diets and health programs, we could do with a lot less of the oil. So instead of the conventional fries, why not make potato pancakes? Spice up your dishes with them, and gain the satisfaction and praise of family and friends! They are the perfect part of a nutritious, balanced meal (don’t you just love this line in breakfast cereal commercials?).
Ingredients are simple:
4 potatoes
1 small onion
5mL salt
50mL oil
2 eggs
125mL flour
Yes, just 50mL of oil for a plateful of potato pancakes!
Now for the procedures:
Scrub potatoes well and peel the onion. Grate the potato and onion in a food processor. Drain. Combine flour, salt, and eggs in a large bowl; stir to blend. Add the potato-onion mixture to the flour mixture and stir well.
Heat oil in a frypan at 350F. Spoon 25mL spoonfuls of the potato mixture into the frypan; spread with fork. Brown slowly, turning once to cook the other side. Depending on the size of your frypan, you may need to use two at the same time or make several batches.
Drain on paper towels and serve immediately on a heated platter. Side with ketchup or sour cream, if desired.
And viola, a delicious batch of potato pancakes is created! Serving sizes vary depending on the size of your potatoes. Enjoy, bon appetit, etc etc.
