Mixed Olives with Fresh Mozzarella and Almonds

Mixed Olives with Fresh Mozzarella and Almonds.
4 cups mixed or green olives
3 tablespoons olive oil
4 garlic cloves, minced
2 tablespoons fresh orange zest
1 tablespoon fresh lemon zest
1 pinch dried red chile flakes
Vz pound whole fresh mozzarella cheese balls, drained
1 cup dry-roasted whole almonds
2 tablespoons chopped fresh parsley Salt and pepper to taste
In a medium skillet combine olives, oil, garlic, orange and lemon zest and chile flakes. Cook on low for about 7 to 8 minutes. Remove and let cool. In a serving bowl combine olive mixture with cheese, almonds, parsley, salt and pepper, mixing to coat well. Serve at room temperature or cool.
Makes 4 servings.
