Moroccan Style Hummus
There is something so sensual and sultry about Moroccan cuisine – the combination of cinnamon, cumin, and cardamom with chick peas, garlic, orange and prunes. These are my favourite flavours in hummus.
1 tbsp olive oil
1/2 small white onion finely chopped
1 large clove garlic
1 can chick peas
1 tsp cumin
1 tsp cinnamon
1 tsp cardamom
1 tbsp sweet Thai chilli sauce
1 tbsp tahini (sesame seed puree)
2 tsp orange zest
1 tsp lemon zest
Juice of 1 orange
1/4 cup chopped pitted prunes
In a small pan, heat the oil over medium heat. Add onion and sauté till onion is lightly caramelized. Stir in garlic and cook for a minute.
Add the spices and rest of the ingredients except the chick peas and prunes.
In the food processor, pulse the chick peas a few times. Add the onion and spice mixture.
Run the food processor till desired consistency. Fold in the prunes.
Serve with crudites, pita chips or crackers
