Nutritious Potato Recipes

Potatoes are delicious and they are good for you to boot. You can get more potassium from a potato than any other thing.There are so many ways to serve potatoes there isn’t any excuse not to serve them often. The honest baked potato is a noble thing. Also it’s easy to make which is a huge plus to the harried cook. And it doesn’t even dirty up a pan. But if you crave something fancier you can do that and it isn’t much more trouble.

 Try to eat your baked potatoes as soon as they come out of the oven, otherwise they will become soggy. Don’t let anyone tell you that pricking them while baking will help make them lighter. Fix your baked potatoes the last thing to have them light and luscious.  A little butter and salt is all you need to dress baked potatoes but if you want to go to extra trouble you can.  You can beat up some sour cream with onion soup mix, or chopped bacon, or anything you want to use as a dressing.  If you tire of baked potatoes try this:

Cook and mash your potatoes as usual ( best with hot milk) then pile your potatoes in a greased casserole and sprinkle grated cheese on top. Put on aplenty and bake for 30 minutes uncovered in a 350 oven.

Another good way to prepare potatoes:

Cook and mash potatoes using cream salt and pepper. Now chop and saute an onion until it’s tender, in oil or butter. Add it to the mashed potatoes. Put all this in a greased oven proof dish and let it sit uncovered, in the oven at 300 for 45 minutes.

And another:

Grate up potatoes with the grater with the big holes. Mix a can of condensed soup, whatever you like, mushroom, celery, chicken or whatever, with half a can of milk. Heat it and pour over the potatoes. Bake uncovered in a 350 oven for and hour and fifteen minutes.

And another:

Mash up potatoes as usual.  Make cream gravy and mix with mustard and a bit of Worcestershire sauce and pour it into your mashed potatoes. Mix and pour all of it into a greased baking dish. Put plenty of cheese on top and bake twenty five minutes in a 350 oven.

    We eat a lot of baked potatoes. Every time my mom goes to the supermarket she buys two for us. We had them this week with stuffed cabbage.
