EASY / PREPARE AHEAD

juice 1 orange

50ml (2fl oz) pineapple juice 2 garlic cloves, crushed 2tsp fresh ginger, grated 1 small onion, chopped 12 chicken drumsticks

1  Mix the orange juice, pineapple juice, garlic, ginger and onion

in a shallow dish. Using a sharp knife, slash the chicken drumsticks all over, add to the marinade and leave for at least 30 minutes, or preferably store covered in the fridge overnight.

2 When ready to cook, place the drumsticks on the cooler part

of the barbecue and cook for 20 to 25 minutes, basting frequently with the marinade. Turn the drumsticks a couple of times, until they are cooked through and there is no pink meat. Discard any unused marinade. Per drumstick: 115 calories. 4g fat (2g saturated/. 2g carbohydrate
