Papaya Fool

A very healthy dessert especially on a hot day. Easy to make too.

Papaya Fool

  • 1 papaya (about 3 kg) – peeled, seeded and mashed
  • 2 tbsp lime juice
  • sugar to taste
  • 6 eggs – separate the yolks and whites (both will be used)
  • 600ml evaporated milk or coconut milk

Method:

1. Stir egg yolks into milk in a pan. Bring to boil over low heat, stirring all the time. Take it off fire once it started to boil. Allow the mixture to cool. Beat well. 

2. Mix mashed papaya, lime juice and sugar in another bowl. Blend well.

3. Add the milk mixture into the papaya mixture. Mix.

4. Beat egg whites until stiff. Fold in the egg whites into the papaya mixture. Chill.

5. Serve the dish cold in individual ice-cream glasses or dessert bowl.
