Pistachio Potato Salad

 Serves: 12

Time required: 20 minutes

Ingredients Required:

·         1 kg potatoes

·         1 cup frozen peas, defrosted

·         1 cup sliced large carrot, sliced

·         1 cup fresh corn kernels’1 cup small pieces of broccoli

·         ¼ cup sliced green onion

·         ½ cup natural pistachios

·         ¾ cup plain yoghurt

·         ¾ cup fat- free mayonnaise

·         1 tsp dill weed

·         ½ tsp black pepper

Method:

·         Cook whole potatoes in boiling water about 15 to 20 minutes, or until tender, drain

·         Cool, and then slice potatoes to about 1 cm thick.

·         Combine the potatoes with the peas, carrot, corn, broccoli, green onion and pistachios in large bowl.

·         Stir yoghurt with the mayonnaise, dill and pepper’ combine with vegetable and toss gently. Serve
