Potato Chops with dried fruits and nuts -A Vegetarian Recipe.

How to make Potato Chops with dried fruits and nuts

The Recipe:

For Filling:

3 handfuls of raisins

2 handfuls of chopped nuts like almonds or cashew nuts or brazil nuts or a mix of all three or two(whatever is available!)

1 chopped onion

1 teaspoon of vegetable oil 

Half a teaspoon of gharam masala powder(optional)

Salt to taste

Preparation:

Heat oil in a small pan lightly fry the chopped onion till golden brown and then add the raisins and chopped nuts. Mix all ingredients together and then season with salt and gharam masala powder(optional). Turn off the flame.

For the Potato Chops:

5-6 large potatoes 

Vegetable oil for frying

1 beaten egg

100 grams semolina

Preparation:

Wash and boil potatoes in a pan till soft.  Make sure that the potatoes are fully immersed in water before boiling. If cooking potatoes in a pressure cooker, it would take about 5 or 6 whistles for medium potatoes to get done. De-skin the boiled potatoes and mash. Add salt and some butter while mashing the potatoes. You may also like to add a little bit of milk for a creamier mash(2 or 3 tablespoons of milk should be enough!).

Take sufficient amount of mashed potato to form a ball of about 3 inches in diameter. Make a small well in the centre of the ball and fill it with some of the prepared dried fruits and nuts filling.

Close the well to form a ball again. Slightly flatten the potato and cheese and onion filled ball. Then dip the potato chop in beaten egg and coat well with semolina. Heat oil in a pan and fry the potato chop, one side at a time.  

Potato Chops with dried fruits and nuts  make a great vegetarian starter and party snack recipe.
