Potato Souffle

2 cups mashed potatoes, warn or cold

8 ounce package cream cheese

2 eggs

1 small onion, diced

2 tablespoons flour

salt and pepper

3 1/2 oz. can french fried onions

Mash potatoes in large mixer bowl, using about half as much milk as ordinarily used. Add softened cheese, eggs, diced onion and flour. Beat at low speed until blended, then at high speed until fluffy and light. Add salt and pepper to taste. Pour into greased 9 inch round baking dish. Sprinkle French fried onions over top. Bake at 300 degrees for 35 minutes. Makes 6 servings.
