Pumpkin Flan

These syrup-glazed Mexican custards taste like pumpkin pie without the crust.

Pumpkin Flan 

2/3 Cup Sugar

3 Eggs, beaten

3/4 Cup Pumpkin (canned)

2/3 Cup Evaporated Milk

1/4 Cup Sugar

1 Tsp. Vanilla Extract

1 Tsp. Pumpkin Pie Spice**

1 Tsp. Orange Peel, shredded

Pomegranate Seeds (Optional)

Citrus-Pumpkin Flans

In heavy skillet, melt 2/3 cup of sugar, which is to caramelize the sugar.  Do not stir, rather shake the skillet occasionally.  When sugar begins to melt, reduce heat to lot and cook, stirring frequently with a wooden spoon until golden brown.  Remove skillet from heat and pour caramelized sugar equally into four ungreased 6-ounce custard cups or ramekins.  Tilt the cups to coat the bottoms of each cup.  Place cups in large square baking dish.  

In medium mixing bowl, stir together eggs, pumpkin, milk and the 1/4 remaining sugar, pumpkin pie spice, orange peel and vanilla.  Pour the pumpkin mixture over the caramelized sugar in cups.  Place the pan on the oven rack and pour boiling water into the baking dish, surrounding the 4 ramekins or custard cups up to 1 inch of water.  

Bake at 325 degrees for 40 to 45 minutes or until knife comes out clean.  Remove cups from water and cook slightly on wire rack.  Chill covered for at least 4 hours and up to 24 hours for make-ahead desserts.

To serve, loosen edges of flans with a knife, slipping the point of the knife down the sides to let in air.  Invert a dessert plate over each flan; turn custard cup and plate over together.  Scrape the caramelized sugar that remains in cup onto the flan.   Garnish with pomegranate seeds.

**To make your own pumpkin pie spice, stir together 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, 1/8 teaspoon ground nutmeg, and 1/8 teaspoon ground allspice

    I’ve never eaten a pumpkin pie (people just don’t make such stuff from pumpkins in Slovakia) so I cannot imagine how these taste. The thing in the photo looks delicious though.
