To make this tasty breakfast even more attractive, is that it is good for you. This recipe yields to servings; each of which has 300 calories. The important nutrients that you gain from this heart oatmeal include 3.4 milligrams of iron, 389 milligrams of calcium, 13.6 grams of protein, 8.6 grams of fiber, and 25 micrograms of folate.

Ingredients:

1 ½ Cup of soy milk

½ Teaspoon of pumpkin spice

½ Cup of canned pumpkin

1 Tablespoon of brown sugar

1 Tablespoon of Splenda (or other natural sugar substitute)

½ Teaspoon of vanilla extract

¼ Cup of low fat milk

1 Teaspoon of crystalline ginger bits

1 Tablespoon of chopped Almonds

Directions:

  1. Heat the soy milk and pumpkin spice in medium saucepan.

  2. When the soy milk and spice reaches a gentle boil add the oats and let the mixture return to a simmer.

  3. Reduce the heat under the pan and let the mixture simmer gentle for around five minutes.

  4. Stir in the pumpkin, brown sugar, Splenda, and vanilla.

  5. Let the mixture cook for around one minute to reach an even heat, but do not let it boil.

  6. Remove the pan from heat and divide the oatmeal evenly into two bowls.

  7. Add the milk to each bowl and sprinkle with the ginger bits and almonds as desired.

  8. Settle in for a nice breakfast and enjoy.
