Quick and Easy Vegetable Frittata

An Italian omelet (frittata) that’s healthy and very easy to make.

Ingredients for the frittata:

5 eggs

¼ cup milk

2 T. grated parmesan cheese

½ tsp. oregano

½ tsp black pepper

2 T butter

1 cup zucchini, sliced

½ carrots,shredded

½ cup green onions, sliced

1 cup swiss cheese, shredded

How to make the frittata. Beat eggs in a bowl. Stir in milk, parmesan cheese, oregano, and pepper. Set aside. Melt butter in a skillet. Add zucchini, shredded carrots and onions. Cook while stirring slowly in medium heat until vegetables are tender. Do not overcook. Top with swiss cheese, then pour egg mixture over the vegetables. Cook without stirring over low heat for 8–10 minutes or until set. Remove from heat. Let stand for about 5 minutes before cutting into wedges. Serve hot with bread or rice.
