Recipe for Delicious Cowboy Tacos

Warm, spicy, and tangy.

Serves: 12 Tacos
Prep Time: 30-35 Minutes

Ingredients:
1 lb. Boneless Pork loin, cut into thin strips
1 Package of taco seasoning
2 Table spoons of vegetable oil
1 cup salsa
1 cup chili beans
1/4 cup apricot preserves
12 Taco shells

Preparation:
1. In a bowl, mix together the taco seasoning and pork strips, taking care that each strip gets seasoning on it.
2. In a large skillet, heat the oil using medium/high heat. Cook your seasoned pork strips 3-4 minutes.
3. Recude the heat to low and slowly stir in your salsa, beans, and apricot preserves. Simmer 10-14 minutes, stirring occasionally.
4. Remove from heat and with a spoon, scoop about 1/3 cup of your filling into a taco shell. Serve.
