PREPARATION TIME: 15 MINUTES SERVES 4 TO 6

EASY / PREPARE AHEAD

1 large baguette

2tsp anchovy paste, or ready-made pesto

50g (2oz) rocket

2tbsp olive oil

10 cherry tomatoes, halved

50g (2oz) Parmesan cheese shavings

200g (7oz) roast beef, thinly sliced

1 Split the baguette vertically and spread one half with the anchovy paste or pesto. Scatter over the rocket and drizzle with the olive oil.

2 Add the tomatoes. Parmesan and beef slices, and season with salt and freshly ground black pepper. Top with the other half of the baguette and tie with string at 5cm (2in) intervals to hold it together. Wrap tightly in clingfilm to keep it fresh.

Per serving: 380-252 calories, 15-10g fat (5-3.5g saturated), 36-24g carbohydrate
