Roasted Figs & Prosciutto

Delicious treat that is sweet and salty. Hope you enjoy.

Serves 10/ Make sure that the figs are ripe, even though it is hard to find ripe ones in the market. Take advantage of them if you find them

20 large fresh ripe figs

20 thin slices Italian prosciutto (about 8 ounces)

Good olive oil

  • Preheat oven to 425 degrees.
  • Snip the hard steams off the figs and cut the figs in half lengthwise through the stem. With a small sharp knife, cut the prosciutto lengthwise into inch-wide strips. Wrap a strip of prosciutto around the center of each fig half, with the ends overlapping. Brush with olive oil and arrange cut side up on a sheet pan.
  • Roat the figs for 10 min, until the prosciutto is a little crisp and the figs are warmed through. Serve warm.

Helpful hint

  • When buying figs buy them in trays, this is because they are bigger and thus you get more for your money, when they come in a box they get smashed and are usually smaller.
