Savory Stuffed Peppers

These delicious peppers are low in fat and long on taste. Double you recipe because the family wont stop at eating just one. And for that extra punch, you have most of the nutrients required for a meal in one pepper. Eye catching and delicious, what more could you want? If you aren’t vegetarian, add a slice of beef and a carrot that’s been cooking all day in the crock pot. Make a green salad and have a nice juicy apple for dessert and there you have it.

For my own use, I use more beans and less rice. I also serve the rest of the beans as a side dish and make a green salad. I hope you enjoy these delicious peppers as much as we do.

6 red large peppers

2 (8.8 oz.) packages Uncle Ben’s Ready Rice

1 tsp chopped garlic

1 medium onion

1/4 cup chopped celery

1 tsp oregano

1/2 cup canned black beans

1/2 tsp salt

Preheat oven to 350. Cut off pepper tops and remove all pith and seeds.

In a  large skillet, combine rice, garlic, onions, oregano,celery and salt.

Saute for 4 minutes. Stir in beans.

Fill peppers with rice mixture. Place in a large baking dish.

Add water so it comes 1/4 inches up the side of the dish.

Bake for twenty minutes or until rice filling is very hot.

Now serve to your family and reap the compliments.

    MM sounds tasty indeed. I like the way you use less rice and more beans. Beans are rich in proteine, but you will not reduce the ammount of carbs by reducing rice. Beans are more than 60% carbs as well. (In case you are doing it for reducing carbs) . Cooking time for me tonight! :D .Thanks Ruby!

    My mother use to make stuffed green peppers and I never liked them. Maybe I should try yours as it sounds good.

    Guess what my mom and I are having next week on Tuesday to have one last treat before LEnt begins. My mom is intrigued by adding beans. She usually makes the same recipe for stuffed cabbage and puts it in a pepper, but never thought to add beans. Thanks for giving us such s wonderful recipe.

    Sounds great! My partner latched onto a red pepper recipe having visited an Italian restaurant in our home city of Norwich (UK) but it\’s not veggie! He fills his with rice, garlic, onion, tomato and minced beef and then melts mozzarella cheese on the top!! However, I\’m more tempted to your veggie version as I eat very little meat.

    I like the look of this, but I agree with one of the other commenters that it’d be nice to add cheese to the top. Maybe some thinly-sliced blue stilton.
