Scalloped Corn
Who doesn’t like corn? Corn is one of those all time favorites, eat it anytime favorite vegetables around my house. Corn is also a very versatile vegetable and can be used in many ways. One way we like it is in a simple to make casserole.
SCALLOPED CORN
This corn dish is so good. My family all love it and it is really easy to make.
Preheat oven to 350 degrees and lightly butter 1 1/2 quart casserole dish and set aside.
In a mixing bowl combine
2 (15 ounce) cans creamed corn
1 (15 ounce) can whole kernel corn drained
2 eggs beaten
1 Tbsp. finely chopped onion
1 cup crushed saltine crackers
1/4 cup butter melted
1 Tbsp. sugar
1/2 tsp. salt
1/2 teaspoon paprika
1/4 teaspoon ground black pepper
Mix well to combine and pour into prepared casserole dish
Bake at 350 degrees for 30 to 40 minutes or until corn is bubbly around the edges. Last 10 minutes of cooking sprinkle a generous amount of grated cheese and 1 Tbsp. finely chopped fresh parsley over the top and return to oven for the last 10 minutes of baking time or until cheese melts and top is slightly browned. Let cool for a few minutes before serving. Garnish with 3-4 cherry tomatoes and a sprig of fresh parsley. This is a very pretty and tasty dish and who doesn’t like corn?
