Scalloped Eggplant

1 medium eggplant

1 beaten egg

salt

1/2 cup milk

2 tablespoons butter or oleo

1 small onion (chopped)

1 cup dry bread or cracker crumbs

1/2 cup grated cheese

Pare eggplant. Cut in about  inch cubes. Cook in boiling water 8 minutes. Drain. Add egg, milk, butter, onion and bread crumbs. Place in greased baking dish. Top with cheese. Bake at 350 degrees for 30 minutes.
