Smooth and Easy Applesauce
A very easy method of making smooth applesauce. This is spicier and a bit less sweet than commercial applesauce.
The most daunting thing about homemade applesauce is all the peeling and coring. You can cut down the time for this enormously by using a mechanical apple peeler and an apple slicer/corer. You can find these in hardware stores or online.
You can also make applesauce easier simply by using a soft type of apple, such as Macintosh. Macintoshes not only cook up fast but have a particularly good flavor for applesauce.

3 # Macintosh apples, peeled, cored and cut up 2/3 cups sugar 2 teaspoons ground cinnamon 1/8 teaspoon ground cloves |
Directions
Cook the apples very soft. Put them (and the juice that cooked out of them) through a food mill. Add the sugar and spice and stir until all of the sugar is dissolved.
Tips
This recipe makes a scant three cups of applesauce.
Do use a food mill, not a food processor. A food mill is a bit old fashioned, but it’s the right tool for this job because it removes the coarse parts of fruits or vegetables instead of just chopping them up. You can buy a food mill in many hardware stores.
I think this is enough sugar for sweeter apples, such as Macintosh, but sweetening for applesauce is very much a matter of personal preference.
