Soya Beans Barfi
A delicious sweet made with Soya beans.
100 g Soya beans ; 50g boiled potato; 75g ghee; 100g sugar; 1 tbsp ground cashews, raisins, pistas and chironji(A small round shaped brownish nut with distinctive flavor. The flavor is similar to that of hazelnuts) ¼ tsp ground cardamom; varak(silver-foil) for decoration.
Soak the Soya beans overnight. Remove skins by rubbing vigorously between the palms of your hands. Blend in a mixer. Fry Soya beans in ghee in a frying pan, over a low flame. When half fried, add mashed potato. Fry the mixture till pink. Mix in sugar and some hot water and stir thoroughly. Cook till the mixture leaves the sides of the vessel. Add the nuts and cardamom and fry the mixture in a little ghee. Place the mixture on a greased plate. Flatten it with the back of a spoon and decorate with silver paper. Cut into desired shapes when cool.
