Spaghetti and Meatballs The Old Fashioned Way

SAUCE:

3 tablespoons cooking oil

2 medium onions, chopped

1 large clove garlic, minced

1/3 cup dried parsley flakes

salt and pepper

1 12-ounce can tomato paste

2 8-ounce cans tomato sauce

1/2 cups water (or more)

1 teaspoon oregano

4-5 bay leaves, broken

On medium heat, cook onions and garlic in oil until soft; about 3-4 minutes. Add parsley flakes and simmer 3-4 minutes. Salt and pepper. Then add tomato sauce and paste. Add water. Simmer for one hour. Add oregano and bay leaves. Simmer covered for 4-5 hours. (Cook uncovered for thicker sauce). Stir occasionally to prevent sticking and to blend flavors. Remove pieces of bay leaf.
