Ingredients
5 med. potatoes
1 large onion- diced
1 to 2 T. of Evoo
1 to 2 eggs
Directions
Peel 5 medium size potatoes and cut them up into cubes. Then, peel and cut 1 large onion. Add these to a large skillet with Evoo, cooking until crispy. Next, add 1 to 2 eggs and scramble with potatoes and onion. ENJOY ENJOY!
