Spice Pineapple Mousse

Okay… Here is a really delicious kicked up pineapple mousse. It’s very easy to make and it gives you a different variation to offer your guests, other than your traditional mousse.

Ingredients:

  • 1 – 6 ounce can of frozen pineapple juice.
  • 1/2 teaspoon of nutmeg
  • 1 teaspoon of vanilla
  • 1/2 cup of sugar
  • 1 cup (1/2 pint) of whipping cream
  • 2 egg whites

Preparation:

  1. Thaw the pineapple juice.  
  2. Add all the spices and sugar.
  3. Fold the blended ingredients into whipped cream
  4. Add the beaten egg whites (soft).
  5. Put the blended ingredients into about 7-8 small cups or ramekins that are freezable.
  6. Place the cups into the freezer until frozen.
  7. Remove from freezer 1/2 hour before serving to make for easy eating.
