Spicy Mango, Pear and Pistacio Nut Dessert

An exotic, refreshing and deliciously aromatic spicy mango, pear and pistachio nut dessert enhanced with the uplifting flavors that a cinnamon stick and a twist of orange bring to this simple, easy to make, budget friendly dessert.

Spicy Mango, Pear and Pistachio Nut Dessert Ingredients:
- 1 Can (410g) of Pear Quarters in Syrup
- 1 Can (410g) of Peach Slices in Syrup
- 1 Orange
- 1 Lightly Crushed Cinnamon Stick
- 2 Tablespoons of Chopped Pistachio Nuts

Method:
- Coarsely grate the orange zest onto a saucer
- Using a sieve over a saucepan drain the mango slices and the pear quarters
- Shake the sieve well to remove as much excess syrup as possible
- Set sieve with drained fruit aside over a large bowl (to catch drips)
- If the mango slices are too large then use a sharp thin bladed knife to cut them into thinner slices
- Add the orange zest and the lightly crushed cinnamon stick to the saucepan with the mango and pear syrup already in it
- While gently stirring bring the syrup mixture to the boil
- Continue to vigorously boil the syrup mixture for 5-6 minutes or until the volume of the syrup mixture has been reduced to half and becomes aromatic with cinnamon
- While the syrup is boiling arrange the pear quarters and the mango slices in four large, shallow dessert dishes
- Strain the reduced syrup
- Use a tablespoon to spoon the strained syrup over the mangos and pears
- Sprinkle with chopped pistachio nuts and serve

Serving: Serves 4 and can be served warm or cold.
