Spinach Lasagne

Serves 6.

2 tsp. olive oil

1 lg. onion, thinly sliced

2 garlic cloves, crushed

2 pkgs. frozen spinach (or use fresh)

2 1/2 oz. instant Lasagne noodles

Lg. tub low-fat ricotta cheese

Heat oil in frying pan & gently cook onion & garlic for 3-4 min. w/o browning.  Add spinach & cook til spinach has thawed & is hot.

Prheat oven to 350 deg. F.  Grease shallow oven-proof dish.

Dip 2 1/2 lasagne noodles in hot water for 1 min., then place on bottom of dish.  Cover w/ 1/2 the spinach mixture & dot 1/2 of ricotta on top.  Repeat.  Then top w/ remaining 2 1/2 lasagne noodles, finishing w/ layer of ricotta.

Optional–sprinkle w/ Parmesan cheese.

Bake for 30 min.
