Spinach Rice Healthy Bake

Spinach rice: serves two.

ingredients:

spinach layer

two finely chopped onions;two chopped tomatoes;one teaspoon finely chopped ginger

one teaspoon finely chopped green chillies;400 gms boiled spinach [ or one bunch]

one tablespoon olive oil;salt as per taste

rice

150 gms rice soaked and then boiled;one teaspoon olive oil;one tablespoon milk;salt as per taste

chilli flakes [paprika];oregano;olives;cheese

preparation: spinach layer:heat oil, add onions, ginger and green chillies, saute till soft, add tomatoes, boiled spinach, salt and saute.

rice layer:heat oil, add cooked rice, salt, paprika, oregano, olives, milk and remove from gas after two minutes

take a baking dish. spread the rice layer evenly. spread the spinach layer over that. grate cheese and bake for ten minutes.
