Spinach Salad

Ingredients for 5-6 servings as a side dish: one kg spinach, one cup creamy curd, 1-2 cloves garlic, ½ tbsp bland oil, ½ tsp salt, ½ tsp black pepper powder.

Method: Heat the oil in a large pan or kadhai, swirling it well around the sides. Add the spinach by handfuls, as it wilts and loses bulk, till you can get all in. Cook uncovered on low heat till tender. Raise the heat and cook stirring for a few minutes till nearly dry. Then leave it to cool.

Blend the garlic, salt and pepper in to the beaten curd. Fold the curd mixture in to the spinach. If you like, you can avoid mixing them thoroughly, so that you get an attractive dappled or marbled effect.

Turn it out into a serving dish and chill.

Spinach is good and healthy and I am sure the Popai lovers would love it.
