Spinach Stuffed Tomatoes

Tomatoes are stuffed with a mixture of spinach.

Ingredients:

Large tomatoes                        -       6

Spinach                                    -       300gms

Cheese or cottage cheese       -       1 tbsp

Egg (optional, can replace        -       1

with 1 tsp corn flour)

Salt                                          -       to taste

Pepper                                     -       to taste

Method:

  • Put the spinach in Tupperware’s Multi Cook Strainer, pour some water in the lower container of Multi Cook and steam the spinach for 5 or 6 minutes in the microwave. Remove the spinach and squeeze out the extra water, then chop it with Tupperware’s Quick Chef and set aside.
  • Slice the top of the tomatoes (about in inch thick) and take out its pulp & seeds. (You can keep this aside for later use in a salad or gravy). Salt the inside of the tomatoes.
  • Mix the egg with cheese (grated using Tupperware’s Handy Grate) adds some plain yogurt to the mixture to help it blend properly. Add the chopped spinach, salt and pepper to the egg and cheese mixture.
  • Cover the tomatoes with the slice you had cut of earlier and place them in Multi Cook strainer & add water to the lower container of Multi Cook for steaming the spinach stuffed tomatoes in the microwave for 10-15 minutes. Serve hot.
