Spinach with Raisins and Pine Nuts

Spinach is one of the dark green leafy vegetables which is healthy and give extra nourishment to our body. This recipe gives you a better idea on how to cook spinach with raisins and pine nuts.

Ingredients:

1/4 cup raisins

2 pounds young fresh spinach

2 tablespoons clarified butter or vegetable oil

1 garlic clove, minced

1/2 cup pine nuts, toasted

Coarse salt and freshly ground pepper to taste

Procedure:

1. Soak the raisins in hot water to cover for about 10 minutes.

2. Trim the stems from the spinach and wash the leaves. Shake them dry.

3. Melt the butter in a large frying pan. Add the garlic and cook for 2 minutes. Add the spinach and stir-fry until wilted but bright green. Sprinkle with the raisins and pine nuts. Toss, season with salt and pepper.

Yield: 2-3 servings

    Garlic and spinach are two of my favorite foods. I would never think of adding nuts and raisins. You may be on to something good. Thanks.
